Cinnamon Raisin Peanut Butter Cookies
These Cinnamon Raisin Peanut Butter Cookies are a mouthful – seriously, have you seen them on Instagram?
I grew up in a home where baked goods were always accessible. My Mom is an amazing baker and always spoiled us with banana bread, cookies, brownies, you name it. After growing up and learning more about health and how to fuel my body, I still found myself always craving something sweet. This has been such a motivation/push for me to find healthier treats and snacks that satisfy my sweet tooth but are still good for me.
These Cinnamon Raisin Peanut Butter Cookies are soft, chewy, moist and lightly sweetened. They are gluten free, dairy free & can absolutely be made vegan.
This recipe makes about 8 cookies depending on the size you scoop out.
- 1/2 cup Simply Stacked Grain Free Mix (can use any flour you wish)
- 1/4 cup of Cinnamon Raisin Peanut Butter
- 2 tablespoons of raw honey
- 2 tablespoons of unsweetened vanilla almond milk
- 1 egg
- Vanilla extract
- Cinnamon to taste
Preheat your oven to 350 degrees. Line a cookie sheet with parchment paper.
In a large bowl, pour your flour. In another bowl combine egg, peanut butter, honey and almond milk. Mix well. Add the cinnamon and vanilla extract and mix again. Add the wet mixture to your flour bowl and combine until a dough is formed (add more milk if it is too dry). Separate dough into equal pieces and roll into small balls and place onto your cookie sheet. Press down on each cookie with a spoon or fork.
Bake for about 8 minutes or until golden brown.
