Gluten Free Pumpkin Pancakes

We all love pancakes, BUT do we love the extra calories and little to no nutritional value that they have? Absolutely not. Pancakes have always been one of my go-to breakfasts when I want something special or to switch things up on the weekends from Overnight Oats, Chia Pudding, etc.

The fabulous team at Simply Stacked sent me some of their SIMPLE mix that is grain free, dairy free and delicious. Their mix has a coconut flour base which means it is low glycemic, loaded with fiber and even has protein (most flours do not). They pride themselves on simple ingredients and stacked flavor on their product and I could not agree more. One of the best parts about their SIMPLE mix is that you can use it for a variety of things: cookies, waffles, crepes, pancakes – anything!

This morning I used them for some pancakes to start off my weekend. Even though it is now May, I still crave pumpkin (basic white girl problems) so naturally I wanted to make some pumpkin pancakes to spice them up with extra flavor and nutritional value.

This recipe makes about 4 medium sized pancakes. I recommend doubling the recipe if there is more than 1 person eating them.

Gluten free Pumpkin Pancakes

Ingredients:

  • 1/4 cup Simply Stacked Grain Free Mix
  • 1/4 cup organic pumpkin puree (comes in a can)
  • 3 eggs
  • 2 tbsp raw honey (microwaved for 5 seconds to soften)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions:

In a large bowl, combine eggs, pumpkin puree, coconut oil, and vanilla. In another bowl, combine Simply Stacked with cinnamon. Add the dry mix to wet mixture and mix until while combined.

Heat a non-stick pan to medium heat and coat pan with oil of your choice (I used coconut oil). Pour about 2 tablespoons per pancake onto the skillet.

Cook for 2-3 minutes, or until cooked through, and flip to other side. Cook for another 2 minutes, and repeat with remaining batter. I recommend keeping the heat on medium throughout as they definitely cook quickly.

Top pancakes with nut butter, honey, maple syrup, yogurt, anything!
