My (skinny) Chunky Monkey Overnight Oats
That’s right my fellow oats fans, we now have a healthier version of Ben & Jerry’s Chunky Monkey ice cream AND you can even eat it for breakfast. This obviously isn’t an ice cream but hey we can dream right?
Now, we all know that our friends Ben & Jerry’s pint of Chunky Monkey is filled with banana ice cream, fudge and walnuts and is quite delicious. But unless it’s your birthday or you’re feeling rebellious, you aren’t exactly going to be having ice cream for breakfast – or do you? .. no judgement 🙂
By now you should know the basics of what overnight oats consist of and if you don’t, head over to my Original Overnight Oats Recipe to learn more about OOs. If you’ve been following along my Instagram @rachLmansfield for the last couple of weeks, you have seen first hand the different combinations of toppings I put into my OOs to spice things up.
Here is the recipe for my (skinny) Chunky Monkey Overnight Oats:
- 1/2 cups of Old Fashioned Oatmeal (can be gluten free if needed)
- 3/4 -1 cup of unsweetened almond milk (depends how thick you like it)
- 1 tablespoon of chia seeds
- 1 banana sliced
- 1 tablespoon of Justin’s Chocolate Hazelnut Butter (you can use any chocolate nut butter here)
- 1 tablespoon of chocolate chips
- 1 tablespoon of walnuts
- dash of cinnamon
Add oats, milk and chia seeds together into your mason jar or tupperware. Shake well. Add sliced banana, chocolate nut butter*, walnuts, chocolate chips and cinnamon. Stir until mixed well. Put into the fridge and enjoy the next morning!
*you can also put the nut butter in your OOs in the morning so it’s softer
